Homemade Navajo Tacos

Larry made some scrumdidiliumpious Navajo Tacos today from scratch.



For those of you who do not know what Navajo Tacos are (I was one of those before tonight) they are scones with all the trimmings and toppings you would normally put on tacos. So you start with some nice deep fried scones (everything tastes better fried)



Then you add meat, lettuce, tomatoes, sour-creme, Salsa, and more...

Yum Yum, I told Larry he could make those ANYTIME!!!!!

I am grateful this season for FOOD, and that we have enough for our family!

Merry Christmas

We had this picture taken of Abi when she had just turned 1. I absolutely LOVE this picture and figured it was the perfect season to post this. The quality of the picture is not great as it is a copy of a scan of the original LOL

Saying goodbye to a good friend...



When my parents moved to the United States in 1995, My brother Paul, my mom and I went to the pound to find a puppy for our family. We looked up and down and stopped at one dog that just sat there and stared at us. She did not jump up or bark, she just sat there and stared at us with her puppy eyes. The pound had no idea how old she was, but they were guessing anywhere between 1 and 2 years old. So we signed the papers, payed the man and took our SAM home.



SAM has been the absolute best dog EVER! She was never mean, angry or hostile. She let all the kids climb on her, play with her and drive her crazy. She was extremely loyal all the way until her last day.



SAM had been suffering from Arthritis in her legs and was having a hard time getting around. She had been with our family since 1995, and we figured she was already 2 when we got her, so she was about 16 years old (105 in doggie years or so) Well my parents took her to the vet today after she fell through her hind legs once again, and had a hard time getting up and down the stairs. And we said goodbye to our beloved doggie SAM. The vet told us that she had been in pain for a while now, but because she was SO loyal to us, she never let us know that.

We will miss you SAM. You were there at the top of the stairs when we walked in the door. You waited patiently for us when you wanted to go on a walk. You always had hugs to share, and almost made everyone feel loved.

Julie & Julia



Larry and I went on a little date night last night to see Julie & Julia... and I have to say I absolutely LOVED it. Larry did as well actually. We both LOVE to cook and usually cook every meal together at night. And I LOVE to blog, so I thought this would be the perfect movie for us. I know it just came out on DVD this week as well, but it was playing at the dollar theatre and we just needed to get away.

After we got out of the theatre it was about 9 pm and we both looked at each other and said: "let's go home and cook!" It made me want to go out and get Julia Childs cook book and cook through the whole book like Julie did.

So tonight I tried something new for dinner. I grew up in Holland and we have things called "poffertjes" there. They are like little silver dollar sized pancakes, and I loved them growing up. I would request poffertjes for dinner for my birthday and my mom and dad were nice enough to make them for me, the entire family, and all the kids over for my birthday party. Now you have to know that poffertjes are VERY time consuming to make. You have a pan that makes 7 of these little silver dollar sized cakes at a time, and so to feed an army you can imagine this would take time.



Well I never realized how much time until I made them for our little family of 4 tonight. As soon as I was done with a batch for Chloe, Abi had finished hers and wanted more. I still had to make a batch for Larry, then me, and then it would be Abi's turn again... so we had to be patient tonight at the dinner table. (not an easy thing) So YES I have never made poffertjes from scratch before, this was my 1st time, and they turned out to be DELICIOUS! Now will I make them again? I am sure I will, but I will make sure to make them before dinner time so we can all eat together.



I really do LOVE to cook, and if I had not gone back to school for Graphic Design I would have gone to culinary school instead. It was a hard choice to make between the two, and who knows maybe in a few years I will go back to school for culinary. I would LOVE that!

But just for now I enjoy cooking together with the love of my life. We sometimes make meals that taste awesome and sometimes we are not sure wether to feed it to our kids or not... but we do it together and that is the best part of it all.
